Sabudana Khichdi (साबूदाणा खिचडी)
साबूदाणा खिचडी (Sabudana Khichdi) is a popular Maharashtrian dish made with sago pearls, peanuts, and potatoes. It is often enjoyed during fasting days or as a breakfast dish.
Ingredients
- 1 cup sago pearls (sabudana)
- 2 medium-sized potatoes, boiled and chopped
- 1/2 cup roasted peanuts
- 2-3 green chilies, chopped
- 1 teaspoon cumin seeds
- 1/2 teaspoon sugar
- 1/2 teaspoon lemon juice
- Fresh coriander leaves, chopped
- Rock salt (sendha namak) to taste
- 2 tablespoons ghee (clarified butter)
Instructions
- Wash the sago pearls and soak them in water for 4 hours. Drain any excess water.
- Heat ghee in a pan, add cumin seeds, and let them splutter.
- Add chopped green chilies and sauté for a minute.
- Add boiled potatoes, roasted peanuts, and soaked sago pearls. Mix well.
- Add rock salt, sugar, and lemon juice. Mix and cook for 5-7 minutes.
- Garnish with chopped coriander leaves and serve hot.
