साबूदाणा खिचडी (Sabudana Khichdi) is a popular Maharashtrian dish made with sago pearls, peanuts, and potatoes. It is often enjoyed during fasting days or as a breakfast dish.

Sabudana Khichdi (साबूदाणा खिचडी)

Ingredients

  • 1 cup sago pearls (sabudana)
  • 2 medium-sized potatoes, boiled and chopped
  • 1/2 cup roasted peanuts
  • 2-3 green chilies, chopped
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon sugar
  • 1/2 teaspoon lemon juice
  • Fresh coriander leaves, chopped
  • Rock salt (sendha namak) to taste
  • 2 tablespoons ghee (clarified butter)

Instructions

  1. Wash the sago pearls and soak them in water for 4 hours. Drain any excess water.
  2. Heat ghee in a pan, add cumin seeds, and let them splutter.
  3. Add chopped green chilies and sauté for a minute.
  4. Add boiled potatoes, roasted peanuts, and soaked sago pearls. Mix well.
  5. Add rock salt, sugar, and lemon juice. Mix and cook for 5-7 minutes.
  6. Garnish with chopped coriander leaves and serve hot.
