Sabudana Vada (साबूदाणा वडा)
साबूदाणा वडा (Sabudana Vada) is a popular Maharashtrian snack made with soaked tapioca pearls, mashed potatoes, and a few spices. It is a delicious and crispy snack that is often enjoyed during fasting days or as an evening snack.
Ingredients
- 1 cup sabudana (tapioca pearls)
- 2 medium potatoes, boiled and mashed
- 1 green chili, finely chopped
- 1/2 teaspoon cumin seeds
- 2 tablespoons roasted peanuts, coarsely ground
- 2 tablespoons fresh coriander leaves, chopped
- 1 teaspoon lemon juice
- Salt to taste
- Oil for frying
Instructions
- Rinse the sabudana under water until the water runs clear. Soak the sabudana in water for 3-4 hours.
- After soaking, fluff the sabudana with a fork and transfer it to a mixing bowl.
- Add mashed potatoes, green chili, cumin seeds, ground peanuts, coriander leaves, lemon juice, and salt to the sabudana. Mix well to form a dough.
- Divide the dough into equal portions and shape them into small patties.
- Heat oil in a pan for frying. Once the oil is hot, carefully slide the vadas into the oil and fry until golden and crispy.
- Remove the vadas from the oil and place them on a paper towel to drain excess oil.
- Serve the sabudana vadas hot with chutney or yogurt.
