Sabudana Vada (साबूदाणा वडा)

साबूदाणा वडा (Sabudana Vada) is a popular Maharashtrian snack made with soaked tapioca pearls, mashed potatoes, and a few spices. It is a delicious and crispy snack that is often enjoyed during fasting days or as an evening snack.

Sabudana Vada (साबूदाणा वडा)

Ingredients

  • 1 cup sabudana (tapioca pearls)
  • 2 medium potatoes, boiled and mashed
  • 1 green chili, finely chopped
  • 1/2 teaspoon cumin seeds
  • 2 tablespoons roasted peanuts, coarsely ground
  • 2 tablespoons fresh coriander leaves, chopped
  • 1 teaspoon lemon juice
  • Salt to taste
  • Oil for frying

Instructions

  1. Rinse the sabudana under water until the water runs clear. Soak the sabudana in water for 3-4 hours.
  2. After soaking, fluff the sabudana with a fork and transfer it to a mixing bowl.
  3. Add mashed potatoes, green chili, cumin seeds, ground peanuts, coriander leaves, lemon juice, and salt to the sabudana. Mix well to form a dough.
  4. Divide the dough into equal portions and shape them into small patties.
  5. Heat oil in a pan for frying. Once the oil is hot, carefully slide the vadas into the oil and fry until golden and crispy.
  6. Remove the vadas from the oil and place them on a paper towel to drain excess oil.
  7. Serve the sabudana vadas hot with chutney or yogurt.
