Sabzi Adas is a traditional Assyrian spinach and lentil stew that is packed with flavor and nutrients. This hearty and comforting dish is perfect for a cozy family meal or a gathering with friends.
Ingredients
- 1 cup red lentils
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 4 cups fresh spinach, chopped
- 4 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent.
- Add the minced garlic, ground cumin, ground coriander, and turmeric to the pot. Stir and cook for 1-2 minutes until fragrant.
- Rinse the red lentils under cold water and add them to the pot. Stir to combine with the onion and spices.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low and let it simmer for 20 minutes, or until the lentils are tender.
- Add the chopped spinach to the pot and cook for an additional 5-7 minutes, until the spinach wilts.
- Season the stew with salt and pepper to taste. Serve hot and enjoy!
