Sabzi (afghan Spinach Stew)

Ingredients

  • 1 lb spinach, washed and chopped
  • 1 onion, finely chopped
  • 3 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • 1/2 tsp ground cumin
  • Salt to taste
  • 2 tbsp vegetable oil
  • 2 cups water

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onions and cook until they are soft and translucent.
  3. Add the minced garlic, ground coriander, turmeric, cumin, and salt. Cook for 2 minutes, stirring constantly.
  4. Add the diced tomatoes and cook until they are soft and the mixture becomes a thick paste.
  5. Add the chopped spinach and water. Stir well and bring to a simmer.
  6. Cover the pot and let the stew cook for 30 minutes, stirring occasionally.
  7. Once the spinach is tender, the sabzi is ready to serve.
