Sabzi (afghan Spinach Stew)

Ingredients
- 1 lb spinach, washed and chopped
- 1 onion, finely chopped
- 3 tomatoes, diced
- 2 cloves garlic, minced
- 1 tsp ground coriander
- 1 tsp ground turmeric
- 1/2 tsp ground cumin
- Salt to taste
- 2 tbsp vegetable oil
- 2 cups water
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onions and cook until they are soft and translucent.
- Add the minced garlic, ground coriander, turmeric, cumin, and salt. Cook for 2 minutes, stirring constantly.
- Add the diced tomatoes and cook until they are soft and the mixture becomes a thick paste.
- Add the chopped spinach and water. Stir well and bring to a simmer.
- Cover the pot and let the stew cook for 30 minutes, stirring occasionally.
- Once the spinach is tender, the sabzi is ready to serve.
