Sabzi Biryani (spiced Vegetable Biryani)
Sabzi Biryani is a flavorful and aromatic Indian rice dish packed with spiced vegetables. It's a perfect option for vegetarians and vegans who want to enjoy the rich flavors of biryani.
Ingredients
- 2 cups basmati rice, soaked and drained
- 2 onions, thinly sliced
- 1 cup mixed vegetables (carrots, peas, bell peppers, etc.)
- 1/2 cup yogurt
- 1/4 cup chopped mint leaves
- 1/4 cup chopped cilantro
- 1 tablespoon ginger-garlic paste
- Whole spices (cinnamon, cardamom, cloves)
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon biryani masala
- 1/4 cup fried onions
- 1/4 cup ghee or oil
- Salt to taste
- 2 1/2 cups water
Instructions
- Heat ghee/oil in a large pot and add the whole spices. Sauté until fragrant.
- Add the sliced onions and cook until golden brown.
- Stir in the ginger-garlic paste, mixed vegetables, and cook for a few minutes.
- Add the yogurt, mint, cilantro, and spices. Cook for 2-3 minutes.
- Layer half of the rice over the vegetable mixture. Sprinkle half of the fried onions on top.
- Add the remaining rice and top with the remaining fried onions.
- Pour water over the rice, cover, and cook on low heat until the rice is tender.
- Fluff the rice gently with a fork before serving.
