Sabzi Biryani (vegetable Biryani)
Sabzi Biryani is a flavorful and aromatic rice dish from North Indian Cuisine, packed with a variety of vegetables and fragrant spices. It's a perfect dish for a special occasion or a hearty family meal.
Ingredients
- 2 cups basmati rice
- Assorted vegetables (carrots, peas, potatoes, cauliflower) - 2 cups, diced
- Onion - 1, thinly sliced
- Tomato - 1, chopped
- Yogurt - 1/2 cup
- Ginger-garlic paste - 1 tablespoon
- Biryani masala - 2 tablespoons
- Saffron strands - a pinch
- Fresh cilantro (coriander) leaves - for garnish
- Ghee (clarified butter) - 2 tablespoons
- Salt - to taste
- Water - 4 cups
Instructions
- Wash and soak the basmati rice in water for 30 minutes. Drain and set aside.
- Heat ghee in a large pot and sauté the sliced onions until golden brown.
- Add the assorted vegetables and sauté for 5 minutes.
- Stir in the ginger-garlic paste, biryani masala, and chopped tomatoes. Cook for 2-3 minutes.
- Whisk the yogurt with a little water and add it to the pot. Cook for another 5 minutes.
- Layer the soaked rice over the vegetable mixture in the pot. Sprinkle saffron strands on top.
- Pour water over the rice, add salt, and bring to a boil. Reduce the heat, cover, and simmer for 15-20 minutes until the rice is cooked.
- Garnish with fresh cilantro leaves and serve hot.
