Sabzi Biryani (vegetable Biryani)

Ingredients

  • 2 cups basmati rice
  • Assorted vegetables (carrots, peas, potatoes, cauliflower) - 2 cups, diced
  • Onion - 1, thinly sliced
  • Tomato - 1, chopped
  • Yogurt - 1/2 cup
  • Ginger-garlic paste - 1 tablespoon
  • Biryani masala - 2 tablespoons
  • Saffron strands - a pinch
  • Fresh cilantro (coriander) leaves - for garnish
  • Ghee (clarified butter) - 2 tablespoons
  • Salt - to taste
  • Water - 4 cups

Instructions

  1. Wash and soak the basmati rice in water for 30 minutes. Drain and set aside.
  2. Heat ghee in a large pot and sauté the sliced onions until golden brown.
  3. Add the assorted vegetables and sauté for 5 minutes.
  4. Stir in the ginger-garlic paste, biryani masala, and chopped tomatoes. Cook for 2-3 minutes.
  5. Whisk the yogurt with a little water and add it to the pot. Cook for another 5 minutes.
  6. Layer the soaked rice over the vegetable mixture in the pot. Sprinkle saffron strands on top.
  7. Pour water over the rice, add salt, and bring to a boil. Reduce the heat, cover, and simmer for 15-20 minutes until the rice is cooked.
  8. Garnish with fresh cilantro leaves and serve hot.
