Ingredients

  • 1 lb chicken, cut into pieces
  • 2 cups fresh spinach, chopped
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch ginger, grated
  • 1 tomato, chopped
  • 1/2 cup plain yogurt
  • 1/2 cup heavy cream
  • 2 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in minced garlic and grated ginger, cook for 1 minute.
  4. Add chicken pieces and cook until they are no longer pink.
  5. Stir in chopped tomato, coriander powder, turmeric, red chili powder, and salt. Cook until the tomatoes are soft.
  6. Whisk together yogurt and heavy cream, then add it to the pot. Cook for 5 minutes.
  7. Add chopped spinach and cook until wilted.
  8. Simmer the curry for 10-15 minutes until the chicken is cooked through and the sauce has thickened.
  9. Garnish with fresh cilantro before serving.
