Sabzi Polo (fragrant Herb Pilaf)

Ingredients

  • 2 cups basmati rice
  • 1 bunch fresh dill, chopped
  • 1 bunch fresh cilantro, chopped
  • 1 bunch fresh parsley, chopped
  • 1/2 cup vegetable oil
  • 1 large onion, thinly sliced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • Salt and pepper to taste
  • 4 cups water

Instructions

  1. In a large bowl, wash the basmati rice until the water runs clear. Drain the rice and set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the sliced onion and sauté until golden brown.
  3. Add the chopped dill, cilantro, and parsley to the pot and sauté for 5 minutes, stirring occasionally.
  4. Stir in the ground cumin, turmeric, salt, and pepper, and cook for an additional 2 minutes.
  5. Add the drained rice to the pot and stir to combine with the herb mixture.
  6. Pour in the water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 30 minutes until the rice is tender and the water is absorbed.
  7. Fluff the pilaf with a fork and serve hot.
