Sabzi Polo (fragrant Herb Pilaf)
Sabzi Polo, or Fragrant Herb Pilaf, is a traditional Tajik dish that is bursting with the flavors of fresh herbs and aromatic spices. This dish is a staple in Tajik cuisine and is often enjoyed during special occasions and celebrations.
Ingredients
- 2 cups basmati rice
- 1 bunch fresh dill, chopped
- 1 bunch fresh cilantro, chopped
- 1 bunch fresh parsley, chopped
- 1/2 cup vegetable oil
- 1 large onion, thinly sliced
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- Salt and pepper to taste
- 4 cups water
Instructions
- In a large bowl, wash the basmati rice until the water runs clear. Drain the rice and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the sliced onion and sauté until golden brown.
- Add the chopped dill, cilantro, and parsley to the pot and sauté for 5 minutes, stirring occasionally.
- Stir in the ground cumin, turmeric, salt, and pepper, and cook for an additional 2 minutes.
- Add the drained rice to the pot and stir to combine with the herb mixture.
- Pour in the water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 30 minutes until the rice is tender and the water is absorbed.
- Fluff the pilaf with a fork and serve hot.
