Sabzi Polo (herbed Rice Pilaf)
Sabzi Polo is a traditional Persian herbed rice pilaf that is packed with flavor and vibrant colors. This dish is a staple in Caspian cuisine and is commonly served during Nowruz, the Persian New Year.
Ingredients
- 2 cups basmati rice
- 1 bunch fresh dill, chopped
- 1 bunch fresh cilantro, chopped
- 1 bunch fresh parsley, chopped
- 1/2 cup olive oil
- 1 teaspoon ground saffron dissolved in 2 tablespoons hot water
- Salt to taste
Instructions
- Wash the basmati rice and soak it in salted water for 2 hours.
- Bring a large pot of water to a boil and add the soaked rice. Cook for 6-8 minutes until the rice is parboiled. Drain and set aside.
- In a separate bowl, mix the chopped dill, cilantro, and parsley with the saffron water and olive oil.
- In the same pot, layer the parboiled rice with the herbed mixture, creating alternating layers.
- Cover the pot with a clean kitchen towel and a lid. Cook over low heat for 30 minutes to allow the rice to steam and the flavors to meld together.
- Once the rice is cooked, gently fluff it with a fork and transfer it to a serving platter.
