Ingredients

  • 1 pound carrots, peeled and sliced
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup raisins
  • 1/4 cup chopped fresh cilantro
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  3. Stir in the ground turmeric, ground coriander, and red pepper flakes, and cook for 1-2 minutes.
  4. Add the sliced carrots, raisins, and enough water to cover the carrots.
  5. Season with salt and pepper, then cover and simmer for 20-25 minutes, or until the carrots are tender.
  6. Stir in the chopped cilantro and adjust the seasoning if needed.
  7. Serve the sabzi hot as a delicious side dish.
