Sabzi (sweet And Spicy Carrot Curry)

Ingredients
- 1 pound carrots, peeled and sliced
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1/2 teaspoon red pepper flakes
- 1/4 cup raisins
- 1/4 cup chopped fresh cilantro
- Salt to taste
- Pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Stir in the ground turmeric, ground coriander, and red pepper flakes, and cook for 1-2 minutes.
- Add the sliced carrots, raisins, and enough water to cover the carrots.
- Season with salt and pepper, then cover and simmer for 20-25 minutes, or until the carrots are tender.
- Stir in the chopped cilantro and adjust the seasoning if needed.
- Serve the sabzi hot as a delicious side dish.
