Sachertorte Sensation

Ingredients

  • 1 cup (225g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 8 oz (225g) bittersweet chocolate, melted and cooled
  • 1 cup (125g) all-purpose flour
  • 1 cup (200g) apricot jam
  • 6 large eggs, separated
  • 1 cup (200g) confectioners' sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch (23cm) round cake pan.
  2. In a large bowl, cream the butter and granulated sugar until light and fluffy. Add the melted chocolate and mix until well combined.
  3. Beat in the egg yolks one at a time, then stir in the vanilla extract.
  4. Gently fold in the flour until just combined.
  5. In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the egg whites into the chocolate mixture.
  6. Pour the batter into the prepared cake pan and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Once the cake is completely cool, spread the apricot jam over the top.
  9. In a small bowl, whisk together the confectioners' sugar and 2-3 tablespoons of hot water to make a smooth glaze. Pour the glaze over the top of the cake, allowing it to drip down the sides.
  10. Let the glaze set before serving. Enjoy!
