Sachertorte (viennese Sachertorte)

Ingredients

  • 6 oz (170g) bittersweet chocolate, chopped
  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 tsp vanilla extract
  • 6 large eggs, separated
  • 1 cup (100g) ground almonds
  • 1 cup (125g) all-purpose flour
  • 1/2 cup (100g) apricot jam
  • 1/4 cup (50g) powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch (23cm) round cake pan.
  2. Melt the chocolate in a heatproof bowl set over a pan of simmering water. Let it cool slightly.
  3. In a large bowl, cream the butter and granulated sugar until light and fluffy. Add the vanilla extract and mix well.
  4. Beat in the egg yolks one at a time, then stir in the melted chocolate, ground almonds, and flour until well combined.
  5. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture.
  6. Pour the batter into the prepared cake pan and smooth the top. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  8. Once the cake is cool, heat the apricot jam in a small saucepan over low heat. Press the jam through a fine sieve to remove any lumps.
  9. Spread the sieved apricot jam over the top and sides of the cake.
  10. Dust the cake with powdered sugar before serving.
