Sachertorte (viennese Sachertorte)
Sachertorte is a famous Viennese chocolate cake that is a must-try for any dessert lover. This rich and decadent cake is perfect for special occasions or as a delightful treat with a cup of coffee.
Ingredients
- 6 oz (170g) bittersweet chocolate, chopped
- 1 cup (225g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 tsp vanilla extract
- 6 large eggs, separated
- 1 cup (100g) ground almonds
- 1 cup (125g) all-purpose flour
- 1/2 cup (100g) apricot jam
- 1/4 cup (50g) powdered sugar
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch (23cm) round cake pan.
- Melt the chocolate in a heatproof bowl set over a pan of simmering water. Let it cool slightly.
- In a large bowl, cream the butter and granulated sugar until light and fluffy. Add the vanilla extract and mix well.
- Beat in the egg yolks one at a time, then stir in the melted chocolate, ground almonds, and flour until well combined.
- In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture.
- Pour the batter into the prepared cake pan and smooth the top. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Once the cake is cool, heat the apricot jam in a small saucepan over low heat. Press the jam through a fine sieve to remove any lumps.
- Spread the sieved apricot jam over the top and sides of the cake.
- Dust the cake with powdered sugar before serving.
