Ingredients
- 1 liter full-fat milk
- 1/2 cup sugar
- 1/4 teaspoon saffron threads
- 2 tablespoons lemon juice
- 1/4 cup heavy cream
- 1/4 teaspoon cardamom powder
- 2 tablespoons chopped nuts (pistachios, almonds, or cashews)
Instructions
- Pour the milk into a heavy-bottomed pan and bring it to a boil.
- Once the milk starts boiling, reduce the heat and add lemon juice to curdle the milk.
- Once the milk solids separate from the whey, strain them using a muslin cloth to make chenna (paneer).
- In a separate pan, heat the heavy cream and add saffron threads. Let it simmer for a few minutes.
- Add the chenna, sugar, and cardamom powder to the saffron cream mixture and cook until it thickens.
- Remove the mixture from heat and let it cool. Then, shape the mixture into small dumplings and garnish with chopped nuts.
- Refrigerate the dumplings for a few hours before serving.
