Ingredients

  • 1 liter full-fat milk
  • 1/2 cup sugar
  • 1/4 teaspoon saffron threads
  • 2 tablespoons lemon juice
  • 1/4 cup heavy cream
  • 1/4 teaspoon cardamom powder
  • 2 tablespoons chopped nuts (pistachios, almonds, or cashews)

Instructions

  1. Pour the milk into a heavy-bottomed pan and bring it to a boil.
  2. Once the milk starts boiling, reduce the heat and add lemon juice to curdle the milk.
  3. Once the milk solids separate from the whey, strain them using a muslin cloth to make chenna (paneer).
  4. In a separate pan, heat the heavy cream and add saffron threads. Let it simmer for a few minutes.
  5. Add the chenna, sugar, and cardamom powder to the saffron cream mixture and cook until it thickens.
  6. Remove the mixture from heat and let it cool. Then, shape the mixture into small dumplings and garnish with chopped nuts.
  7. Refrigerate the dumplings for a few hours before serving.
