Saffron And Pistachio Rice Pudding (rajasthani Kesar Pista Phirni)

Ingredients

  • 1/2 cup basmati rice
  • 4 cups whole milk
  • 1/2 cup sugar
  • 1/4 teaspoon saffron threads
  • 1/4 cup chopped pistachios
  • 1/2 teaspoon cardamom powder

Instructions

  1. Rinse the basmati rice under cold water and soak it for 30 minutes. Drain the rice and grind it into a coarse paste using a food processor.
  2. In a heavy-bottomed pan, bring the milk to a boil over medium heat. Add the ground rice paste and stir continuously to prevent lumps.
  3. Once the mixture thickens, add sugar, saffron threads, and cardamom powder. Cook for another 10-15 minutes until the rice is fully cooked and the mixture reaches a pudding-like consistency.
  4. Remove the pan from the heat and let the pudding cool to room temperature. Stir in the chopped pistachios.
  5. Transfer the pudding to serving bowls and refrigerate for at least 2 hours before serving.
