Ingredients
- 1/2 cup basmati rice
- 4 cups whole milk
- 1/2 cup sugar
- 1/4 teaspoon saffron threads

- 1/2 teaspoon cardamom powder
Instructions
- Rinse the basmati rice under cold water and soak it for 30 minutes. Drain the rice and grind it into a coarse paste using a food processor.
- In a heavy-bottomed pan, bring the milk to a boil over medium heat. Add the ground rice paste and stir continuously to prevent lumps.
- Once the mixture thickens, add sugar, saffron threads, and cardamom powder. Cook for another 10-15 minutes until the rice is fully cooked and the mixture reaches a pudding-like consistency.
- Remove the pan from the heat and let the pudding cool to room temperature. Stir in the chopped pistachios.
- Transfer the pudding to serving bowls and refrigerate for at least 2 hours before serving.
