Saffron Chicken

Ingredients

  • 4 chicken breasts, boneless and skinless
  • 1 teaspoon saffron threads
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Soak the saffron threads in 2 tablespoons of warm water for 10 minutes.
  2. Season the chicken breasts with salt, pepper, cumin, coriander, and cinnamon.
  3. Heat the olive oil in a large skillet over medium heat. Add the chicken and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 2 minutes.
  5. Pour in the chicken broth and the saffron mixture. Bring to a simmer.
  6. Return the chicken to the skillet. Cover and cook for 20-25 minutes, or until the chicken is cooked through.
  7. Sprinkle with chopped cilantro before serving.
