Saffron Chicken

Ingredients
- 4 chicken breasts, boneless and skinless
- 1 teaspoon saffron threads
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- 2 cups chicken broth
- 1/4 cup chopped fresh cilantro
Instructions
- Soak the saffron threads in 2 tablespoons of warm water for 10 minutes.
- Season the chicken breasts with salt, pepper, cumin, coriander, and cinnamon.
- Heat the olive oil in a large skillet over medium heat. Add the chicken and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 2 minutes.
- Pour in the chicken broth and the saffron mixture. Bring to a simmer.
- Return the chicken to the skillet. Cover and cook for 20-25 minutes, or until the chicken is cooked through.
- Sprinkle with chopped cilantro before serving.
