Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced

  • 1 yellow bell pepper, sliced
  • 1 cup Arborio rice
  • 1/2 teaspoon saffron threads
  • 4 cups chicken or vegetable broth
  • 1 cup frozen peas
  • 1 pound chicken thighs, cut into bite-sized pieces
  • 1/2 pound large shrimp, peeled and deveined
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Heat the olive oil in a large paella pan or skillet over medium heat.
  2. Add the onion and garlic, and sauté until softened.
  3. Stir in the bell peppers and cook for a few minutes.
  4. Add the rice and saffron, stirring to coat the rice with the oil and saffron.
  5. Pour in the broth and bring to a simmer. Cook for about 15 minutes.
  6. Add the chicken and cook for another 10 minutes.
  7. Stir in the shrimp and peas, and cook until the shrimp is pink and opaque.
  8. Season with salt and pepper to taste.
  9. Remove from heat and let it rest for a few minutes before serving with lemon wedges.
