Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup Arborio rice
- 1/2 teaspoon saffron threads
- 4 cups chicken or vegetable broth
- 1 cup frozen peas
- 1 pound chicken thighs, cut into bite-sized pieces
- 1/2 pound large shrimp, peeled and deveined
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- Heat the olive oil in a large paella pan or skillet over medium heat.
- Add the onion and garlic, and sauté until softened.
- Stir in the bell peppers and cook for a few minutes.
- Add the rice and saffron, stirring to coat the rice with the oil and saffron.
- Pour in the broth and bring to a simmer. Cook for about 15 minutes.
- Add the chicken and cook for another 10 minutes.
- Stir in the shrimp and peas, and cook until the shrimp is pink and opaque.
- Season with salt and pepper to taste.
- Remove from heat and let it rest for a few minutes before serving with lemon wedges.
