Saffron Rice Pilaf (برياني الزعفران)
Saffron Rice Pilaf, also known as برياني الزعفران, is a traditional Palestinian dish that is fragrant, flavorful, and perfect for special occasions.
Ingredients
- 2 cups basmati rice, rinsed
- 4 cups vegetable broth
- 1/2 teaspoon saffron threads
- 1/4 cup olive oil
- 1 onion, finely chopped
- 1/2 cup slivered almonds
- 1/2 cup golden raisins
- Salt and pepper to taste
Instructions
- In a small bowl, soak the saffron threads in 1/4 cup of warm water for 10 minutes.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the rice to the pot and stir to coat the grains with the oil. Cook for 2-3 minutes.
- Pour in the vegetable broth and saffron water. Season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- While the rice is cooking, heat a small skillet over medium heat. Add the slivered almonds and toast until golden brown, then remove from the heat.
- Once the rice is done, fluff it with a fork and gently stir in the toasted almonds and golden raisins.
- Transfer the saffron rice pilaf to a serving dish and garnish with additional saffron threads for a pop of color.
