Saffron Rice Pilaf (برياني الزعفران)

Ingredients

  • 2 cups basmati rice, rinsed
  • 4 cups vegetable broth
  • 1/2 teaspoon saffron threads
  • 1/4 cup olive oil
  • 1 onion, finely chopped
  • 1/2 cup slivered almonds
  • 1/2 cup golden raisins
  • Salt and pepper to taste

Instructions

  1. In a small bowl, soak the saffron threads in 1/4 cup of warm water for 10 minutes.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the rice to the pot and stir to coat the grains with the oil. Cook for 2-3 minutes.
  4. Pour in the vegetable broth and saffron water. Season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  5. While the rice is cooking, heat a small skillet over medium heat. Add the slivered almonds and toast until golden brown, then remove from the heat.
  6. Once the rice is done, fluff it with a fork and gently stir in the toasted almonds and golden raisins.
  7. Transfer the saffron rice pilaf to a serving dish and garnish with additional saffron threads for a pop of color.
