Saffron Risotto Delight

Ingredients

  • 1 1/2 cups Arborio rice
  • 4 cups vegetable broth
  • 1/2 cup dry white wine
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon saffron threads
  • 1 small onion, finely chopped
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a small bowl, soak the saffron threads in 2 tablespoons of warm water for 10 minutes.
  2. In a large saucepan, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the Arborio rice to the saucepan and stir to coat the grains with the oil and butter.
  4. Pour in the white wine and cook, stirring constantly, until the wine has evaporated.
  5. Begin adding the vegetable broth, one ladle at a time, stirring constantly and allowing each addition to be absorbed before adding the next.
  6. After about 15 minutes, when the rice is almost cooked, stir in the saffron and its soaking liquid.
  7. Continue adding the broth until the rice is creamy and al dente.
  8. Stir in the grated Parmesan cheese and the remaining tablespoon of butter. Season with salt and pepper to taste.
  9. Remove the risotto from the heat and let it rest for a few minutes before serving.
