Ingredients
- 1 1/2 cups Arborio rice
- 4 cups vegetable broth
- 1/2 cup dry white wine
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon saffron threads
- 1 small onion, finely chopped
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a small bowl, soak the saffron threads in 2 tablespoons of warm water for 10 minutes.
- In a large saucepan, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until translucent.
- Add the Arborio rice to the saucepan and stir to coat the grains with the oil and butter.
- Pour in the white wine and cook, stirring constantly, until the wine has evaporated.
- Begin adding the vegetable broth, one ladle at a time, stirring constantly and allowing each addition to be absorbed before adding the next.
- After about 15 minutes, when the rice is almost cooked, stir in the saffron and its soaking liquid.
- Continue adding the broth until the rice is creamy and al dente.
- Stir in the grated Parmesan cheese and the remaining tablespoon of butter. Season with salt and pepper to taste.
- Remove the risotto from the heat and let it rest for a few minutes before serving.
