Saharan Spiced Chicken Skewers

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, whisk together the olive oil, lemon juice, minced garlic, cumin, coriander, cinnamon, ginger, paprika, cayenne pepper, salt, and pepper.
  2. Add the chicken cubes to the bowl and toss to coat them evenly with the marinade. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken cubes onto the soaked wooden skewers.
  5. Grill the skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and has a nice char on the outside.
  6. Remove the skewers from the grill and let them rest for a few minutes before serving.
