Saharan Spiced Chickpea Stew

Ingredients

  • 2 cans of chickpeas, drained and rinsed
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 can of diced tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent.
  2. Add the minced garlic, diced red bell pepper, ground cumin, ground coriander, ground cinnamon, and cayenne pepper. Cook for 2-3 minutes until the spices are fragrant.
