Saharan Spiced Quinoa Salad

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1/4 cup olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • Salt to taste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup sliced almonds, toasted
  • 1/4 cup dried apricots, chopped
  • 1/4 cup golden raisins
  • 1/4 cup pomegranate arils
  • 1/4 cup diced cucumber
  • 1/4 cup diced red onion

Instructions

  1. In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Fluff with a fork and let it cool.
  2. In a small bowl, whisk together the olive oil, cumin, coriander, paprika, cayenne, and salt.
  3. In a large bowl, combine the cooked quinoa, parsley, mint, almonds, apricots, raisins, pomegranate arils, cucumber, and red onion.
  4. Pour the dressing over the quinoa mixture and toss to coat evenly.
  5. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
