Ingredients
- 1 cup quinoa, rinsed
- 2 cups water
- 1/4 cup olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander

- Salt to taste
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup sliced almonds, toasted
- 1/4 cup dried apricots, chopped
- 1/4 cup golden raisins
- 1/4 cup pomegranate arils
- 1/4 cup diced cucumber
- 1/4 cup diced red onion
Instructions
- In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Fluff with a fork and let it cool.
- In a small bowl, whisk together the olive oil, cumin, coriander, paprika, cayenne, and salt.
- In a large bowl, combine the cooked quinoa, parsley, mint, almonds, apricots, raisins, pomegranate arils, cucumber, and red onion.
- Pour the dressing over the quinoa mixture and toss to coat evenly.
- Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
