Ingredients
- 4 large bell peppers
- 1 cup quinoa
- 2 cups vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Rinse the quinoa under cold water and drain.
- In a saucepan, heat the olive oil over medium heat. Add the diced onion and cook until softened.
- Add the minced garlic, ground cumin, coriander, cinnamon, and cayenne pepper to the saucepan. Cook for 1-2 minutes until fragrant.
- Stir in the quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until the quinoa is cooked and the liquid is absorbed.
- Remove the saucepan from the heat and stir in the chopped parsley. Season with salt and pepper to taste.
- Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes.
- Stuff the cooked quinoa mixture into the bell peppers and place them in a baking dish.
- Bake for 25-30 minutes until the peppers are tender.
