Saharan Spiced Quinoa Stuffed Bell Peppers

Ingredients

  • 4 large bell peppers
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Rinse the quinoa under cold water and drain.
  2. In a saucepan, heat the olive oil over medium heat. Add the diced onion and cook until softened.
  3. Add the minced garlic, ground cumin, coriander, cinnamon, and cayenne pepper to the saucepan. Cook for 1-2 minutes until fragrant.
  4. Stir in the quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until the quinoa is cooked and the liquid is absorbed.
  5. Remove the saucepan from the heat and stir in the chopped parsley. Season with salt and pepper to taste.
  6. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes.
  7. Stuff the cooked quinoa mixture into the bell peppers and place them in a baking dish.
  8. Bake for 25-30 minutes until the peppers are tender.
