Ingredients
- 2 cups basmati rice
- 3 1/2 cups vegetable broth
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 1/4 cup raisins
- 1/4 cup slivered almonds
- Salt to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic, ground cumin, ground coriander, ground cinnamon, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Stir in the basmati rice, vegetable broth, raisins, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork and stir in the slivered almonds.
- Transfer the Saharan Spiced Rice Pilaf to a serving dish and garnish with additional almonds if desired. Serve hot and enjoy!
