Saharan Spiced Rice Pilaf

Ingredients

  • 2 cups basmati rice
  • 3 1/2 cups vegetable broth
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup raisins
  • 1/4 cup slivered almonds
  • Salt to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
  2. Add the minced garlic, ground cumin, ground coriander, ground cinnamon, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  3. Stir in the basmati rice, vegetable broth, raisins, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
  4. Fluff the rice with a fork and stir in the slivered almonds.
  5. Transfer the Saharan Spiced Rice Pilaf to a serving dish and garnish with additional almonds if desired. Serve hot and enjoy!
