Saharan Sunset Salad

Ingredients
- 1 head of romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted
- 1/4 cup feta cheese, crumbled (optional for non-vegan version)
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumber, red onion, and Kalamata olives.
- If using, sprinkle the crumbled feta cheese over the salad.
- In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Divide the salad into individual serving bowls and serve immediately.
