Saharan Sunset Salad

Ingredients

  • 1 head of romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted
  • 1/4 cup feta cheese, crumbled (optional for non-vegan version)
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumber, red onion, and Kalamata olives.
  2. If using, sprinkle the crumbled feta cheese over the salad.
  3. In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Divide the salad into individual serving bowls and serve immediately.
