Sai Bhaji Surprise
Sai Bhaji Surprise is a traditional Sindhi dish that is packed with nutritious vegetables and aromatic spices. This hearty and flavorful dish is a perfect way to enjoy a wholesome meal.
Ingredients
- 1 cup spinach, chopped
- 1 cup fenugreek leaves (methi), chopped
- 1/2 cup chana dal (split Bengal gram)
- 1/2 cup tuvar dal (split pigeon peas)
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 1 potato, diced
- 1 carrot, diced
- 1/2 cup cluster beans (gawar fali), chopped
- 1/2 cup drumsticks, cut into 2-inch pieces
- 1/2 cup brinjal (eggplant), diced
- 1/2 cup okra, chopped
- 1/2 cup bottle gourd, diced
- 1/2 cup tamarind pulp
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp cumin seeds
- 1/4 cup oil
- Salt to taste
Instructions
- Wash and soak the chana dal and tuvar dal for 30 minutes.
- In a pressure cooker, add the soaked dals, spinach, fenugreek leaves, all the chopped vegetables, tamarind pulp, turmeric powder, red chili powder, coriander powder, cumin seeds, oil, and salt.
- Add 3 cups of water and pressure cook for 4 whistles or until the dals and vegetables are cooked.
- Once the pressure releases, open the cooker and mix the sai bhaji well.
- Simmer for 10 minutes, stirring occasionally, until the sai bhaji thickens.
- Serve hot with rice or roti.
