Sai Bhaji Surprise

Ingredients

  • 1 cup spinach, chopped
  • 1 cup fenugreek leaves (methi), chopped
  • 1/2 cup chana dal (split Bengal gram)
  • 1/2 cup tuvar dal (split pigeon peas)
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1 potato, diced
  • 1 carrot, diced
  • 1/2 cup cluster beans (gawar fali), chopped
  • 1/2 cup drumsticks, cut into 2-inch pieces
  • 1/2 cup brinjal (eggplant), diced
  • 1/2 cup okra, chopped
  • 1/2 cup bottle gourd, diced
  • 1/2 cup tamarind pulp
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp cumin seeds
  • 1/4 cup oil
  • Salt to taste

Instructions

  1. Wash and soak the chana dal and tuvar dal for 30 minutes.
  2. In a pressure cooker, add the soaked dals, spinach, fenugreek leaves, all the chopped vegetables, tamarind pulp, turmeric powder, red chili powder, coriander powder, cumin seeds, oil, and salt.
  3. Add 3 cups of water and pressure cook for 4 whistles or until the dals and vegetables are cooked.
  4. Once the pressure releases, open the cooker and mix the sai bhaji well.
  5. Simmer for 10 minutes, stirring occasionally, until the sai bhaji thickens.
  6. Serve hot with rice or roti.
