Sai Oua (lao-style Sausage)
Sai Oua is a flavorful Lao-style sausage that is perfect for grilling or pan-frying. It is made with a blend of aromatic herbs and spices, giving it a unique and delicious taste.
Ingredients
- 1 lb ground pork
- 2 tbsp lemongrass, finely chopped
- 2 tbsp galangal, minced
- 2 tbsp shallots, minced
- 2 tbsp garlic, minced
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tbsp sugar
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp turmeric
- 1/2 cup cilantro, chopped
- 6-8 sausage casings
Instructions
- In a large mixing bowl, combine the ground pork, lemongrass, galangal, shallots, garlic, fish sauce, soy sauce, sugar, salt, black pepper, turmeric, and cilantro. Mix well until all the ingredients are evenly distributed.
- Stuff the sausage mixture into the casings, twisting the sausages into 6-8 inch links.
- Heat a non-stick pan over medium heat and add the sausages. Cook for 18-20 minutes, turning occasionally, until the sausages are browned and cooked through.
- Remove from the pan and let them rest for a few minutes before serving.
