Saigon Sunrise (Bánh mì)

Ingredients
- 4 Vietnamese baguettes
- 1 cup pickled daikon and carrots
- 1 cucumber, thinly sliced
- 1/2 cup fresh cilantro leaves
- 1/2 cup mayonnaise
- 1/4 cup Sriracha sauce
- 1 block extra firm tofu, sliced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 1 tablespoon sugar
- 1 teaspoon garlic powder
- 1 teaspoon ground black pepper
Instructions
- Preheat the stovetop grill over medium-high heat.
- In a small bowl, mix together soy sauce, sesame oil, sugar, garlic powder, and black pepper. Marinate the tofu slices in this mixture for 10 minutes.
- Grill the marinated tofu slices for 3-4 minutes on each side, until they develop grill marks.
- Split the baguettes lengthwise and toast them in the oven or on the stovetop until crispy.
- Spread mayonnaise on one side of each baguette, then drizzle with Sriracha sauce.
- Layer the grilled tofu, pickled daikon and carrots, cucumber slices, and cilantro leaves on the baguettes.
