Saigon Sunrise (Bánh mì)

Ingredients

  • 4 Vietnamese baguettes
  • 1 cup pickled daikon and carrots
  • 1 cucumber, thinly sliced
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup mayonnaise
  • 1/4 cup Sriracha sauce
  • 1 block extra firm tofu, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 tablespoon sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon ground black pepper

Instructions

  1. Preheat the stovetop grill over medium-high heat.
  2. In a small bowl, mix together soy sauce, sesame oil, sugar, garlic powder, and black pepper. Marinate the tofu slices in this mixture for 10 minutes.
  3. Grill the marinated tofu slices for 3-4 minutes on each side, until they develop grill marks.
  4. Split the baguettes lengthwise and toast them in the oven or on the stovetop until crispy.
  5. Spread mayonnaise on one side of each baguette, then drizzle with Sriracha sauce.
  6. Layer the grilled tofu, pickled daikon and carrots, cucumber slices, and cilantro leaves on the baguettes.
  7. Serve the Bánh mì (Saigon Sunrise) sandwiches immediately and enjoy!
