Ingredients
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 potatoes, peeled and diced
- 4 cups vegetable broth
- 1 cup sour cream
- 1 cup shredded cheese (such as Telemea or Gouda)
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
