Saka Saka (cassava Leaf Stew)
Saka Saka, also known as Cassava Leaf Stew, is a traditional dish in Congolese cuisine. It is a flavorful and hearty stew made with cassava leaves and often served with a side of fufu or rice.
Ingredients
- 2 lbs cassava leaves, washed and finely chopped
- 1 lb beef, cut into cubes
- 1 onion, finely chopped
- 3 tomatoes, diced
- 1 cup peanut butter
- 2 cups water
- Salt and pepper to taste
Instructions
- In a large pot, brown the beef cubes over medium heat.
- Add the chopped onion and cook until translucent.
- Add the diced tomatoes and cook for 5 minutes.
- Stir in the cassava leaves and cook for 10 minutes.
- Dilute the peanut butter in water and add it to the pot.
- Season with salt and pepper, then reduce the heat and simmer for 1.5 hours, stirring occasionally.
- Adjust the seasoning if necessary and serve hot with fufu or rice.
