Ingredients

  • 2 lbs cassava leaves, washed and finely chopped
  • 1 lb beef, cut into cubes
  • 1 onion, finely chopped
  • 3 tomatoes, diced
  • 1 cup peanut butter
  • 2 cups water
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the beef cubes over medium heat.
  2. Add the chopped onion and cook until translucent.
  3. Add the diced tomatoes and cook for 5 minutes.
  4. Stir in the cassava leaves and cook for 10 minutes.
  5. Dilute the peanut butter in water and add it to the pot.
  6. Season with salt and pepper, then reduce the heat and simmer for 1.5 hours, stirring occasionally.
  7. Adjust the seasoning if necessary and serve hot with fufu or rice.
