Ingredients

  • 4 sheets of nori seaweed
  • 2 cups sushi rice
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 8 slices of smoked salmon
  • 2 ripe avocados, sliced
  • Soy sauce, for serving
  • Wasabi, for serving
  • Pickled ginger, for serving

Instructions

  1. Rinse the sushi rice in a strainer until the water runs clear. Cook the rice according to package instructions.
  2. In a small bowl, mix the rice vinegar, sugar, and salt. Heat in the microwave for 30 seconds and stir until the sugar and salt are dissolved.
  3. Transfer the cooked rice to a large wooden or glass bowl. Pour the vinegar mixture over the rice and fold it in using a wooden spoon. Fan the rice while folding to cool it down.
  4. Place a bamboo sushi mat on a clean surface. Lay a sheet of nori seaweed, shiny side down, on the mat.
  5. With wet hands, spread a thin layer of rice over the nori, leaving a 1-inch border at the top.
  6. Arrange 2 slices of smoked salmon and avocado on the rice. Roll the sushi tightly using the bamboo mat, sealing the edge with a little water.
  7. Cut the sushi roll into 6-8 pieces using a sharp, wet knife.
  8. Serve the sake avocado maki with soy sauce, wasabi, and pickled ginger.
