Sakha Airan (fermented Horse Milk)
Sakha Airan, also known as Chal, is a traditional fermented horse milk beverage enjoyed in the Sakha Republic of Russia. It is a staple in the diet of the Sakha people and is known for its unique flavor and health benefits.
Ingredients
- 1 liter of fresh horse milk
- 1 tablespoon of previously fermented airan (optional starter culture)
Instructions
- Heat the fresh horse milk in a saucepan until it reaches about 30-35°C (86-95°F).
- If using a starter culture, add the previously fermented airan to the warm milk and stir well. If not using a starter culture, proceed to the next step.
- Pour the warm milk into a clean, sterilized container suitable for fermentation.
- Cover the container with a clean cloth or paper towel and secure it with a rubber band to allow air circulation while preventing contaminants from entering.
- Place the container in a warm, dark place for 48-72 hours, stirring the milk once or twice a day to distribute the fermentation culture.
- Once the airan has reached the desired level of tanginess and fermentation, transfer it to the refrigerator to halt the fermentation process.
- Before serving, stir the airan well and pour it into glasses. Enjoy the refreshing and tangy flavor of Sakha Airan!
