Ingredients

  • 1 liter of fresh horse milk
  • 1 tablespoon of previously fermented airan (optional starter culture)

Instructions

  1. Heat the fresh horse milk in a saucepan until it reaches about 30-35°C (86-95°F).
  2. If using a starter culture, add the previously fermented airan to the warm milk and stir well. If not using a starter culture, proceed to the next step.
  3. Pour the warm milk into a clean, sterilized container suitable for fermentation.
  4. Cover the container with a clean cloth or paper towel and secure it with a rubber band to allow air circulation while preventing contaminants from entering.
  5. Place the container in a warm, dark place for 48-72 hours, stirring the milk once or twice a day to distribute the fermentation culture.
  6. Once the airan has reached the desired level of tanginess and fermentation, transfer it to the refrigerator to halt the fermentation process.
  7. Before serving, stir the airan well and pour it into glasses. Enjoy the refreshing and tangy flavor of Sakha Airan!
