Ingredients
- 500g wild mushrooms, sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and garlic, and sauté until softened.
- Add the sliced mushrooms and cook until they release their liquid and become tender.
- Pour in the vegetable broth and bring the soup to a simmer.
- Reduce the heat and stir in the heavy cream. Simmer for an additional 10 minutes.
