Ingredients
- 2 cups birch sap
- 1 cup heavy cream
- 1/2 cup sugar
- 2 tsp gelatin
- 1 tsp vanilla extract
Instructions
- In a small bowl, sprinkle gelatin over 1/4 cup of birch sap. Let it sit for 5 minutes to bloom.
- In a saucepan, combine the remaining birch sap, heavy cream, and sugar. Heat over medium heat until the sugar is dissolved, stirring occasionally.
- Once the sugar is dissolved, remove the saucepan from the heat and stir in the bloomed gelatin mixture until completely dissolved.
- Stir in the vanilla extract.
- Pour the mixture into serving glasses or ramekins. Let it cool to room temperature, then cover and refrigerate for at least 4 hours, or until set.
- Once set, serve the panna cotta chilled, garnished with fresh berries or a drizzle of birch syrup if desired.
