Ingredients

  • 2 cups birch sap
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 2 tsp gelatin
  • 1 tsp vanilla extract

Instructions

  1. In a small bowl, sprinkle gelatin over 1/4 cup of birch sap. Let it sit for 5 minutes to bloom.
  2. In a saucepan, combine the remaining birch sap, heavy cream, and sugar. Heat over medium heat until the sugar is dissolved, stirring occasionally.
  3. Once the sugar is dissolved, remove the saucepan from the heat and stir in the bloomed gelatin mixture until completely dissolved.
  4. Stir in the vanilla extract.
  5. Pour the mixture into serving glasses or ramekins. Let it cool to room temperature, then cover and refrigerate for at least 4 hours, or until set.
  6. Once set, serve the panna cotta chilled, garnished with fresh berries or a drizzle of birch syrup if desired.
