Sakha Huvaa Sorbet, also known as Arctic Cloudberry Sorbet, is a refreshing and tangy dessert that originates from the Sakha region of Russia. This sorbet is made with the unique and flavorful Arctic cloudberry, which is abundant in the Sakha Republic during the short summer season.
Ingredients
- 2 cups fresh Arctic cloudberry
- 1 cup water
- 1 cup sugar
- 1/4 cup lemon juice
Instructions
- In a saucepan, combine water and sugar. Heat over medium heat, stirring occasionally, until the sugar is completely dissolved. Remove from heat and let it cool.
- In a blender, puree the fresh Arctic cloudberry until smooth.
- Strain the cloudberry puree through a fine-mesh sieve to remove the seeds.
- Combine the cloudberry puree, cooled sugar syrup, and lemon juice in a bowl. Mix well.
- Pour the mixture into a shallow dish and place it in the freezer.
- Every 30 minutes, use a fork to scrape and stir the mixture to create a flaky texture. Repeat this process for about 3 hours, or until the sorbet is firm and icy.
- Serve the Sakha Huvaa Sorbet in chilled bowls and garnish with fresh cloudberry if desired.
