Ingredients

  • 2 cups fresh Arctic cloudberry
  • 1 cup water
  • 1 cup sugar
  • 1/4 cup lemon juice

Instructions

  1. In a saucepan, combine water and sugar. Heat over medium heat, stirring occasionally, until the sugar is completely dissolved. Remove from heat and let it cool.
  2. In a blender, puree the fresh Arctic cloudberry until smooth.
  3. Strain the cloudberry puree through a fine-mesh sieve to remove the seeds.
  4. Combine the cloudberry puree, cooled sugar syrup, and lemon juice in a bowl. Mix well.
  5. Pour the mixture into a shallow dish and place it in the freezer.
  6. Every 30 minutes, use a fork to scrape and stir the mixture to create a flaky texture. Repeat this process for about 3 hours, or until the sorbet is firm and icy.
  7. Serve the Sakha Huvaa Sorbet in chilled bowls and garnish with fresh cloudberry if desired.
