Sakha Khara Rolls, also known as Yakutian Cabbage Rolls, are a traditional dish from the Sakha Republic in Russia. These savory rolls are filled with a flavorful mixture of meat, rice, and spices, then wrapped in tender cabbage leaves and simmered to perfection.
Ingredients
- 1 head of cabbage
- 1 pound ground beef
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1 can (14 oz) crushed tomatoes
- 2 cups beef broth
Instructions
- Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes, until they are pliable. Remove and set aside to cool.
- In a mixing bowl, combine the ground beef, cooked rice, onion, garlic, salt, black pepper, paprika, and cayenne pepper. Mix until well combined.
- Place a spoonful of the meat mixture onto each cabbage leaf and roll it up, tucking in the sides as you go. Place the rolls seam side down in a large pot.
- Pour the crushed tomatoes and beef broth over the cabbage rolls. Cover the pot and simmer over low heat for 1 hour, or until the cabbage is tender and the filling is cooked through.
- Serve the Sakha Khara Rolls hot, with a spoonful of the cooking liquid spooned over the top.
