Ingredients

  • 1 lb Arctic char, skin removed, cut into small cubes
  • 1 cup fresh lime juice
  • 1/2 cup fresh lemon juice
  • 1 red onion, thinly sliced
  • 1 jalapeno, seeded and diced
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped mint
  • 1 avocado, diced
  • Salt and pepper to taste

Instructions

  1. In a large glass or ceramic bowl, combine the Arctic char, lime juice, and lemon juice. Make sure the fish is fully submerged in the citrus juices. Cover and refrigerate for 15-20 minutes, stirring occasionally.
  2. After the fish is "cooked" in the citrus juices, add the red onion, jalapeno, cilantro, and mint. Gently toss to combine. Season with salt and pepper to taste.
  3. Gently fold in the diced avocado. Be careful not to mash the avocado.
  4. Divide the ceviche into serving bowls and serve immediately.
