Ingredients

  • 1 cup sushi rice
  • 2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 8 ounces smoked fish, thinly sliced
  • 4 sheets nori seaweed
  • Wasabi and soy sauce for serving

Instructions

  1. Rinse the sushi rice in a fine-mesh strainer until the water runs clear. Drain well.
  2. In a medium saucepan, combine the rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes.
  3. In a small bowl, mix the rice vinegar, sugar, and salt. Heat in the microwave for 30 seconds, then stir until the sugar and salt are dissolved.
  4. Transfer the cooked rice to a large wooden or glass bowl. Gently fold in the vinegar mixture, using a cutting motion to avoid mashing the rice. Let the rice cool to room temperature.
  5. Place a sheet of nori on a bamboo sushi mat. With wet hands, spread a thin layer of rice over the nori, leaving a 1-inch border at the top.
  6. Arrange a few slices of smoked fish in the center of the rice. Roll the sushi tightly, using the bamboo mat to help shape it. Moisten the top border of the nori with water to seal the roll.
  7. Repeat with the remaining nori, rice, and smoked fish.
  8. Using a sharp knife, slice each roll into 6 pieces. Serve with wasabi and soy sauce.
