Saksak Cheesecake (cassava And Coconut Cheesecake)
Saksak Cheesecake is a traditional Melanesian dessert that combines the flavors of cassava and coconut with a creamy cheesecake filling. This unique dessert is a delightful blend of tropical ingredients and rich, creamy texture.
Ingredients
- 2 cups grated cassava
- 1 cup coconut milk
- 1 cup sugar
- 1/2 cup butter, melted
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 8 oz cream cheese, softened
- 1/2 cup sweetened condensed milk
- 2 eggs
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
- In a large bowl, combine the grated cassava, coconut milk, sugar, melted butter, vanilla extract, and salt. Mix well and press into the bottom of the prepared pan.
- In another bowl, beat the cream cheese until smooth. Gradually add the sweetened condensed milk and eggs, beating well after each addition. Pour over the cassava mixture in the pan.
- Bake for 45 minutes, or until the center is almost set. Allow to cool, then refrigerate for at least 4 hours before serving.
