Ingredients

  • 2 cups grated cassava
  • 1 cup coconut milk
  • 1 cup sugar
  • 1/2 cup butter, melted
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/2 cup sweetened condensed milk
  • 2 eggs

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a large bowl, combine the grated cassava, coconut milk, sugar, melted butter, vanilla extract, and salt. Mix well and press into the bottom of the prepared pan.
  3. In another bowl, beat the cream cheese until smooth. Gradually add the sweetened condensed milk and eggs, beating well after each addition. Pour over the cassava mixture in the pan.
  4. Bake for 45 minutes, or until the center is almost set. Allow to cool, then refrigerate for at least 4 hours before serving.
