Saksak (savory Sago Surprise)
Saksak is a traditional dish from the Solomon Islands that features sago, a starchy substance extracted from the pith of various tropical palm trees. This savory sago surprise is a delightful blend of sago, coconut, and other flavorful ingredients, creating a unique and satisfying dish.
Ingredients
- 2 cups sago pearls
- 1 cup coconut milk
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 red chili, finely chopped
- 1 cup cooked and shredded chicken
- Salt to taste
- Black pepper to taste
Instructions
- In a large pot, bring water to a boil. Add the sago pearls and cook for 10 minutes, stirring occasionally.
- Drain the sago pearls and rinse them with cold water. Set aside.
- In a separate pan, heat the coconut milk over medium heat. Add the chopped onion, tomatoes, garlic, and red chili. Cook until the vegetables are tender.
- Add the cooked and shredded chicken to the coconut milk mixture. Season with salt and black pepper to taste.
- Gently fold in the cooked sago pearls and mix until well combined. Cook for an additional 5 minutes, allowing the flavors to meld together.
- Remove from heat and serve the saksak hot, garnished with fresh herbs if desired.
