Ingredients

  • 2 cups sago pearls
  • 1 cup coconut milk
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 red chili, finely chopped
  • 1 cup cooked and shredded chicken
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, bring water to a boil. Add the sago pearls and cook for 10 minutes, stirring occasionally.
  2. Drain the sago pearls and rinse them with cold water. Set aside.
  3. In a separate pan, heat the coconut milk over medium heat. Add the chopped onion, tomatoes, garlic, and red chili. Cook until the vegetables are tender.
  4. Add the cooked and shredded chicken to the coconut milk mixture. Season with salt and black pepper to taste.
  5. Gently fold in the cooked sago pearls and mix until well combined. Cook for an additional 5 minutes, allowing the flavors to meld together.
  6. Remove from heat and serve the saksak hot, garnished with fresh herbs if desired.
