Saksak Sup is a traditional Melanesian soup made with cassava and coconut, creating a rich and creamy dish that is perfect for a comforting meal.
Ingredients
- 2 cups grated cassava
- 1 can (14 oz) coconut milk
- 4 cups water
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp chopped fresh cilantro
Instructions
- In a large pot, combine the grated cassava, coconut milk, and water. Bring to a boil over medium heat.
- Add the chopped onion, minced garlic, salt, and black pepper. Reduce the heat to low and simmer for 30 minutes, stirring occasionally.
- Once the cassava is soft and the soup has thickened, remove from heat and stir in the chopped cilantro.
- Serve hot and enjoy!
