Ingredients

  • 2 cups grated cassava
  • 1 can (14 oz) coconut milk
  • 4 cups water
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp chopped fresh cilantro

Instructions

  1. In a large pot, combine the grated cassava, coconut milk, and water. Bring to a boil over medium heat.
  2. Add the chopped onion, minced garlic, salt, and black pepper. Reduce the heat to low and simmer for 30 minutes, stirring occasionally.
  3. Once the cassava is soft and the soup has thickened, remove from heat and stir in the chopped cilantro.
