Ingredients

  • 500g pork belly, cut into cubes
  • 3 shallots, finely chopped
  • 5 cloves garlic, minced
  • 3 red chilies, sliced
  • 2 tomatoes, chopped
  • 2 stalks lemongrass, bruised
  • 3 kaffir lime leaves
  • 1 tsp tamarind paste
  • 1 tsp salt
  • 1/2 tsp sugar
  • 2 cups water
  • 2 tbsp cooking oil

Instructions

  1. In a large pot, heat the cooking oil over medium heat.
  2. Add the shallots, garlic, and chilies. Sauté until fragrant.
  3. Add the pork belly and cook until browned.
  4. Stir in the tomatoes, lemongrass, and kaffir lime leaves.
  5. Dissolve the tamarind paste in water and pour it into the pot.
  6. Season with salt and sugar. Simmer for 1.5 hours or until the pork is tender.
  7. Serve hot with steamed rice.
