Saksang (fermented Pork Soup)
Saksang is a traditional Batak dish from Indonesia, known for its rich and flavorful taste. This fermented pork soup is a popular choice for special occasions and gatherings.
Ingredients
- 500g pork belly, cut into cubes
- 3 shallots, finely chopped
- 5 cloves garlic, minced
- 3 red chilies, sliced
- 2 tomatoes, chopped
- 2 stalks lemongrass, bruised
- 3 kaffir lime leaves
- 1 tsp tamarind paste
- 1 tsp salt
- 1/2 tsp sugar
- 2 cups water
- 2 tbsp cooking oil
Instructions
- In a large pot, heat the cooking oil over medium heat.
- Add the shallots, garlic, and chilies. Sauté until fragrant.
- Add the pork belly and cook until browned.
- Stir in the tomatoes, lemongrass, and kaffir lime leaves.
- Dissolve the tamarind paste in water and pour it into the pot.
- Season with salt and sugar. Simmer for 1.5 hours or until the pork is tender.
- Serve hot with steamed rice.
