Saksang (spicy Grilled Pork Belly)

Ingredients

  • 1 kg pork belly, sliced
  • 5 red chilies, finely chopped
  • 3 shallots, minced
  • 4 cloves garlic, minced
  • 2 lemongrass stalks, bruised
  • 3 kaffir lime leaves
  • 1 tsp galangal, grated
  • 1 tsp turmeric powder
  • 1 tsp salt
  • 1 tsp sugar
  • 2 cups coconut milk
  • 2 cups water

Instructions

  1. In a large pot, combine the pork belly, red chilies, shallots, garlic, lemongrass, kaffir lime leaves, galangal, turmeric powder, salt, and sugar.
  2. Pour in the coconut milk and water. Stir to combine all the ingredients.
  3. Cover the pot and cook over medium heat for 1 hour, or until the pork belly is tender and the liquid has reduced.
  4. Once the liquid has reduced, remove the cover and continue cooking until the pork belly is caramelized and slightly charred.
  5. Remove from heat and serve the saksang hot with steamed rice.
