Saksang (spicy Grilled Pork Belly)
Saksang is a traditional Batak dish from Indonesia, known for its spicy and flavorful grilled pork belly. This dish is a must-try for those who enjoy bold and aromatic flavors.
Ingredients
- 1 kg pork belly, sliced
- 5 red chilies, finely chopped
- 3 shallots, minced
- 4 cloves garlic, minced
- 2 lemongrass stalks, bruised
- 3 kaffir lime leaves
- 1 tsp galangal, grated
- 1 tsp turmeric powder
- 1 tsp salt
- 1 tsp sugar
- 2 cups coconut milk
- 2 cups water
Instructions
- In a large pot, combine the pork belly, red chilies, shallots, garlic, lemongrass, kaffir lime leaves, galangal, turmeric powder, salt, and sugar.
- Pour in the coconut milk and water. Stir to combine all the ingredients.
- Cover the pot and cook over medium heat for 1 hour, or until the pork belly is tender and the liquid has reduced.
- Once the liquid has reduced, remove the cover and continue cooking until the pork belly is caramelized and slightly charred.
- Remove from heat and serve the saksang hot with steamed rice.
