Sakura Hana Gyoza (sakura Blossom Dumplings)

Ingredients

  • 1/2 pound ground pork
  • 1/2 pound shrimp, peeled and deveined
  • 1 cup Napa cabbage, finely chopped
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon soy sauce
  • 1 tablespoon sake
  • 1 teaspoon sesame oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 24 round gyoza wrappers
  • 1/4 cup water
  • 2 tablespoons vegetable oil

Instructions

  1. In a food processor, pulse the pork and shrimp until coarsely ground.
  2. Transfer the mixture to a bowl and add the Napa cabbage, green onions, garlic, ginger, soy sauce, sake, sesame oil, salt, and black pepper. Mix until well combined.
  3. Place a gyoza wrapper on a clean, dry surface. Spoon about 1 tablespoon of the filling into the center of the wrapper.
  4. Moisten the edge of the wrapper with water. Fold the wrapper in half and pinch the edges together to seal, creating a half-moon shape.
  5. Using kitchen shears, make 5-6 small cuts along the curved edge of the dumpling to create a petal-like effect.
  6. Repeat with the remaining wrappers and filling.
  7. Heat vegetable oil in a large skillet over medium heat. Place the dumplings in the skillet, flat side down, and cook until the bottoms are golden brown, about 2-3 minutes.
  8. Add water to the skillet and immediately cover with a lid. Steam the dumplings for 5 minutes, or until the wrappers are translucent and the filling is cooked through.
  9. Transfer the dumplings to a serving platter and serve hot with dipping sauce.
