Ingredients
- 3 large potatoes, boiled and diced
- 1 cup cooked chickpeas
- 1 cup diced pickles
- 1/2 cup diced red onion

- 1/2 cup vegan mayonnaise
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the boiled and diced potatoes, cooked chickpeas, pickles, red onion, and celery.
