Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons piri piri sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- 6 cups mixed salad greens
- 1 cucumber, sliced
- 1 red onion, thinly sliced
- 1 avocado, sliced
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped peanuts
Instructions
- In a bowl, mix the piri piri sauce, olive oil, salt, and pepper. Add the chicken breasts and coat them with the marinade. Let them marinate for 15 minutes.
- Heat a grill or grill pan over medium-high heat. Grill the chicken for 6-7 minutes on each side, or until cooked through. Let it rest for a few minutes, then slice it.
- In a large bowl, combine the salad greens, cucumber, red onion, and avocado.
- Divide the salad among 4 plates. Top each with sliced chicken, cilantro, and chopped peanuts.
- Serve the salad with extra piri piri sauce on the side, if desired.
