Salada De Frango Piri Piri (piri Piri Chicken Salad)

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons piri piri sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 6 cups mixed salad greens
  • 1 cucumber, sliced
  • 1 red onion, thinly sliced
  • 1 avocado, sliced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped peanuts

Instructions

  1. In a bowl, mix the piri piri sauce, olive oil, salt, and pepper. Add the chicken breasts and coat them with the marinade. Let them marinate for 15 minutes.
  2. Heat a grill or grill pan over medium-high heat. Grill the chicken for 6-7 minutes on each side, or until cooked through. Let it rest for a few minutes, then slice it.
  3. In a large bowl, combine the salad greens, cucumber, red onion, and avocado.
  4. Divide the salad among 4 plates. Top each with sliced chicken, cilantro, and chopped peanuts.
  5. Serve the salad with extra piri piri sauce on the side, if desired.
