Ingredients
- 1 green papaya, shredded
- 1 carrot, shredded
- 1 tomato, diced
- 1/2 cup green beans, chopped
- 1/4 cup peanuts, crushed
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup lime juice
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1-2 red chilies, thinly sliced (optional)
Instructions
- In a large bowl, combine the shredded green papaya, shredded carrot, diced tomato, chopped green beans, crushed peanuts, cilantro, and mint.
- In a small bowl, whisk together the lime juice, soy sauce, and brown sugar until the sugar is dissolved.
- Pour the dressing over the salad and toss to combine.
- Garnish with sliced red chilies, if desired.
