Ingredients

  • 1 green papaya, shredded
  • 1 carrot, shredded
  • 1 tomato, diced
  • 1/2 cup green beans, chopped
  • 1/4 cup peanuts, crushed
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup lime juice
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1-2 red chilies, thinly sliced (optional)

Instructions

  1. In a large bowl, combine the shredded green papaya, shredded carrot, diced tomato, chopped green beans, crushed peanuts, cilantro, and mint.
  2. In a small bowl, whisk together the lime juice, soy sauce, and brown sugar until the sugar is dissolved.
  3. Pour the dressing over the salad and toss to combine.
  4. Garnish with sliced red chilies, if desired.
