Ingredients
- 1 breadfruit, peeled and diced
- 1 cup saltfish, boiled and flaked
- 1 onion, thinly sliced
- 1 tomato, diced
- 1 green bell pepper, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions
- In a large pot, boil the diced breadfruit until tender, then drain and let it cool.
- In a large bowl, combine the boiled and flaked saltfish, sliced onion, diced tomato, diced bell pepper, and chopped parsley.
- Add the cooled breadfruit to the bowl and gently mix all the ingredients together.
- In a small bowl, whisk together the olive oil, lime juice, salt, and pepper to make the dressing.
- Pour the dressing over the salad and toss to coat evenly.
- Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.
