Ingredients

  • 1 breadfruit, peeled and diced
  • 1 cup saltfish, boiled and flaked
  • 1 onion, thinly sliced
  • 1 tomato, diced
  • 1 green bell pepper, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions

  1. In a large pot, boil the diced breadfruit until tender, then drain and let it cool.
  2. In a large bowl, combine the boiled and flaked saltfish, sliced onion, diced tomato, diced bell pepper, and chopped parsley.
  3. Add the cooled breadfruit to the bowl and gently mix all the ingredients together.
  4. In a small bowl, whisk together the olive oil, lime juice, salt, and pepper to make the dressing.
  5. Pour the dressing over the salad and toss to coat evenly.
  6. Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.
