Ingredients
- 1 green papaya, peeled and shredded
- 1 carrot, shredded
- 1/2 cup cherry tomatoes, halved

- 1/4 cup green beans, thinly sliced
- 1 red chili, thinly sliced (optional)
- 1/4 cup lime juice

- 2 cloves garlic, minced
Instructions
- In a large bowl, combine the shredded green papaya, shredded carrot, cherry tomatoes, crushed peanuts, cilantro, mint, green beans, and sliced red chili (if using).
- In a small bowl, whisk together the lime juice, fish sauce (or soy sauce), brown sugar, and minced garlic until the sugar is dissolved.
- Pour the dressing over the salad and toss to combine.
- Let the salad sit for 10 minutes to allow the flavors to meld together.
- Serve the salad topped with extra peanuts and herbs, if desired.
