Ingredients
- 1 pineapple, peeled, cored, and diced
- 2 mangoes, peeled and diced
- 1 papaya, peeled, seeded, and diced
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup lime juice
- 2 tablespoons honey
- 1 teaspoon grated ginger
- Salt and pepper to taste
Instructions
- In a large bowl, combine the pineapple, mangoes, papaya, cucumber, and red bell pepper.
- In a small bowl, whisk together the lime juice, honey, grated ginger, cilantro, and mint.
- Pour the dressing over the fruit and vegetables, and toss gently to coat.
- Season with salt and pepper to taste.
