Salade Paradis Tropicale (tropical Paradise Salad)

Ingredients

  • 1 pineapple, peeled, cored, and diced
  • 2 mangoes, peeled and diced
  • 1 papaya, peeled, seeded, and diced
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup lime juice
  • 2 tablespoons honey
  • 1 teaspoon grated ginger
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the pineapple, mangoes, papaya, cucumber, and red bell pepper.
  2. In a small bowl, whisk together the lime juice, honey, grated ginger, cilantro, and mint.
  3. Pour the dressing over the fruit and vegetables, and toss gently to coat.
