Salade Poulpe (octopus Salad)

Ingredients
- 1 kg octopus, cleaned and tenderized
- 2 tomatoes, diced
- 1 onion, finely chopped
- 1 cucumber, thinly sliced
- 1 green chili, finely chopped
- 1/4 cup fresh coriander, chopped
- 1/4 cup fresh mint, chopped
- Juice of 2 lemons
- Salt to taste
- Pepper to taste
Instructions
- Place the octopus in a large pot of boiling water and cook for 1 hour or until tender. Drain and let it cool.
- Cut the octopus into bite-sized pieces and place in a large mixing bowl.
- Add the tomatoes, onion, cucumber, green chili, coriander, and mint to the bowl with the octopus.
- Drizzle the lemon juice over the salad and season with salt and pepper. Toss gently to combine.
- Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.
